Gluten Free Salted Caramel Popcorn

Constantly struggling to find different things to pack in the kids lunch boxes??  Me too…

Popcorn is one of the easiest and yummiest snacks to make and this recipe is one you can do in the morning when you’re making the kids breakfast.

The first thing you’ll need is a popcorn maker…  Any kind will do and you’ll one at either Target / Kmart / The Good Guys / Big W….  Alternately there’s some really funky ones available online if you really want a feature in the kitchen.

So take 1/3 cup of popping corn and place it in the maker and put a bowl underneath.  Switch it on and let the popcorn maker do its job.

Once finished place the following into a small saucepan (I use a Briki which is traditionally used to make Greek Coffee)

40 grams Salted Organic Butter

60 grams Raw Organic Honey

1/4 teaspoon Himalayan Rock Salt (you can add 1/2 teaspoon for a saltier flavour)

Mix together in the pot until all melted then pour hot onto the popcorn.

Toss around until well coated then pack in the lunch box and store the rest in an airtight container.

Enjoy the standing ovation you’ll get from the kids and save yourself some cash on school snacks!!
